I’ve been meaning to share this recipe for several months now – but obviously I keep forgetting.
This is one of my fav’s to fix on those 4 kid weekends – it’s quick, easy, VERY filling and makes for easy cleanup too.
Ingredients:
Potatoes
Pizza Mix
Nacho Cheese Sauce
1 – 2 lbs. Bacon
2 bags Shredded Cheddar Cheese
Mashed Potato Pizza (my OWN recipe – thank you very much) – will feed six hearty appetites with some left over.
Prepare mashed potatoes as normal (I like to boil mine with the peal on and add just a dash of garlic salt) – about 10 small to medium potatoes.
Prepare a pizza crust mix as directed on the package – I use two Betty Crocker or one Chef Boyardee double mix.
Spread thin layer of nacho cheese spread on the baked pizza crust in place of standard pizza sauce.
Layer potatoes, bacon and shredded cheese, in that order and bake at 425 for approximately 15 minutes.

Now that’s a recipe I have never heard of before! Wow! So the kids enjoy it, huh? I’d probably have to leave out the bacon, but otherwise it sounds delicious!
